Why Wine Pairing Matters
Creating a Memorable Experience: Ever since wine was discovered around the 7000 B.C., it has been a staple addition to all celebrations, feasts and grand dinners. It has been widely accepted that wine makes a perfect, luxurious drink to savour and toast to! Gifting your dad his favourite wine this Father’s Day can be an ideal touch to his celebration, and to his heart. Your dad would love to have his favourite drink paired up with delicious bites of delectable Father's Day dinner specials! A special touch to your Father’s Day celebration all while creating lasting memories.
Enhancing Flavours: Lifting your dad the perfect choice of wine would make a massive difference to his palate. The perfect wine can neutralise the acidity, making the food tender and combining the food well. A wine can also help enhance the flavours of the food, all while making the meal enjoyable. Your dad’s choice of wine will leave him wanting more and more to sip on until he gobbles down his Father’s Day dinner specials! Just make sure everyone gets to taste the wine!
Wine Pairing Basics
Red Wines:
The red velvety wines we all admire contain tannins that often interplay with the richness of the meal. Therefore red wines are popular with grilled meat steaks and roast dishes that elicit rich flavours and textures. If your dad is all about grilled BBQ, paired up with a robust wine. Whereas, if he likes his meat braised, trying wines like a Merlot would be a perfect match.
White Wines:
If your dad is heavily into white meat, pasta dishes or even seafood, white works the best! Remember, white wines pair perfectly with white dishes, white pasta, whitefish and white seafood. The Golden rule is to match the vine with the colour of the food. If your dad is into creamy chicken pasta, white chicken rice, lobsters or shrimp, a bottle of white wine would be ‘chef kiss’ perfect! This would also work with grilled veggies or tarts.
Rosé Wines:
This pink replenishment is versatile and pairs well with salads to seafood! If your dad’s favourite colour is pink, pair his favourite Rosé with a delicate selection of Father’s Day dinner ideas. Rosé makes a perfect companion just salads, white meat, shellfish and subtle food. You can also choose to combine Rosé with cheese and cured meat. If you’re planning to arrange a security board with soft cheeses and feta tartlets, or if you are looking to give your dad Veggie skewers on the barbecue, a Rosé is the way to go! Maybe also try the duck, lamb or quiches for a change!
Sparkling Wines:
If you’re planning to serve your dad a Father’s Day menu with rich, creamy food, sparkling wines would make an excellent pairing. This golden beverage would be a perfect touch to toast your dad’s accomplishments and commitments this Father’s Day. A sparkling wine is a perfect match for rich food with a higher content of fats. These foods are often greasy fried or cooked with lots of sauces. Sparkling wines also pair beautifully with appetisers and desserts, complementing the acidity and sweetness of each. Its bubbly effervescence is sure to help you balance heavier foods while giving you a hint of heaven with each sip!

Get your choice of steak and place it on the grill. Make sure your steak is well oiled before you cover it to cook for about 4 minutes. Flip the steaks and continue to do the same for another tree to 4 minutes, or until the edges are firm, leaving it with a tender. Make sure you cook your dad’s steak the way he likes it; rare, medium rare, medium, and medium well or well done! Once you’re done cooking, brush some premade garlic butter on the steaks and serve. To make your butter, mix minced rosemary thyme, chopped parsley, and garlic with your favourite Aussie Butter!

2. Roast Chicken with Chardonnay
Recipe: A roast chicken is a versatile flavourful and simple dish that everyone adores. This recipe involves a few ingredients that you can easily find at home. Preheat your oven and mix the butter together. This butter is made using 1 butter stick, herbs, salt and pepper! Add lemon juice for more flavour. Transfer your chicken to a roasting pan and brush the herb butter under the skin leaving some for the skin. Spread the remaining butter all around the chicken, squeeze two lemon wedges on your chicken before you stuff those badges and some rosemary inside the chicken. Tie salt and pepper and place your chicken in a tray filled with onion and garlic. Use your favourite wine to drizzle the chicken. Don’t forget to oil it before you pop it in the oven. Roast well for about one and a half hours, rotating the chicken to cook all sides evenly. Check to see if all the juices have run out before you turn the heat down! The perfect golden chicken roast your dad loves!
Wine Pairing: Chardonnay complements the buttery flavours of the chicken, balancing its richness.
3. Pasta Carbonara with Pinot Grigio
Recipe: This beautiful dish requires eggs, parmigiano reggiano, pancetta, Spaghetti, pepper, salt and garlic! Chop your pancetta into one-centimetre cubes and toss it over into your non-stick pan. Let it cook for about 5 minutes in its own fat with regular stirring. You can also add garlic towards the end for an enhanced flavour. Set up your carbonara sauce by whisking the eggs, the egg yolk, your Parmesan cheese, salt and pepper together. Remember to whisk the eggs first before you add the cheese. Boil your pasta and save one cup of pasta water. Combine your pasta with the pancetta in the same pan. Transfer the pasta and the Pancetta combination into your carbonara sauce bowl. Whisk vigorously for about a minute until the sauce thickens and starts sticking to the pasta. Serving hot bowls with extra Parmesan and pepper to taste.
Wine Pairing: Pinot Grigio’s crisp acidity cuts through the richness of the carbonara, making it a refreshing choice.
4. Grilled Salmon with Rosé
Recipe: You are going to love this recipe as much as your dad does! The grilled salmon recipe is so easy you might want to make it every day. All you need 4 is salmon fillets, skin-on, that is about one inch thick (about 6 – 8 ounces), Grape seed oil, Kosher salt, black pepper and lemon. Preheat your grill to about 450 to 500 degrees Fahrenheit. Start by coating the flesh side of the salmon fillet with oil and your favourite seasoning. Drizzle Kosher salt and black pepper over it. Grill the salmon skin side down over direct heat. Remember to keep the oven lid closed for about seven minutes or until you see a lighter colour. As the salmon cooks, watch the skin getting tighter to the touch. Turn the salmon over and cook again for about 2 to 4 minutes according to your dad’s preference. Monitor the heat until the salmon is perfectly cooked. Once cooked, transfer to a plate before you slide the skin away and serve with lemon wedges, dill sauce and cucumber. You can also use a honey-soy glaze for extra flavour!
Wine Pairing: Rosé wines blend ideally with the salmon’s delicate flavours, adding a touch of fruity sweetness.
5. BBQ Ribs with Zinfandel
Recipe: If your dad asks for ribs, you give him ribs! This dish might need your attention and precision. Before you start, set your ingredients on top of the kitchen counter. You will need 4 pounds of pork spareribs, brown sugar, chilli sauce, ketchup, soy sauce, Worcestershire sauce, rum, two garlic cloves, mustard, black pepper and cooking spray! Your first step is to preheat your barbecue oven to about 350 degrees Celsius. Chop your spare ribs into serving portions and double wrap them in aluminium kitchen foil. Bake the pork for about one hour in the oven until well cooked. After an hour, unwrap the foil and drain the excess juices. Before the next step, mix all your ingredients together to create the perfect barbecue sauce. Use the sauce to smear and coat the spare ribs well before you leave it to marinate for at least one hour at room temperature or about eight hours in the refrigerator. After the marinating process, heat your BBQ Grill and coat with cooking oil. Cook the spare ribs for about 30 minutes evenly before you baste the marinade! These slow-cooked barbecue ribs will be perfect to give your dad a memorable Father’s Day.
Wine Pairing: Zinfandel’s bold and spicy notes pair perfectly with the smoky, savoury flavours of the ribs.
